Last Sunday, I decided it was about time for a proper Sunday dinner. I wasn't doing anything that afternoon so it was a perfect day to spend in my kitchen. I wanted something that was yummy and would reheat well for lunch a couple of times this past week. I also have a couple of new cookbooks that I have never cooked from so it needed to be a recipe from one of those books. A few minutes later and Viola!
Lemon Chicken!
Pair this with a nice wild rice salad, a lovely Malbec and some cupcakes for dessert, and it was great! I did overcook the chicken just a bit but there is a nice sauce created while baking that you can use for dipping and it really doesn't matter in the end.
To top off this fabulous dinner, Kelly joined me and we watched four hours of Downton Abbey.
Now, that's how you do Sunday dinner!
